Ingredients:
  • 2 Quarts Water
  • 1 Quart Vinegar
  • 1/2 Cup Canning Salt
  • Alum
  • Oil (I use Olive Oil)
  • Green Peppers (enough for 6 approx 6 quarts)
  • Yellow Banana Peppers (one per jar)
  • Garlic (6 cloves)

  • Steps:
  • Makes approx. 6 quarts of Peppers.
  • Cut and Clean Peppers.
  • Get rid of white from inside of them and cut length wise from top to bottom in about 1 inch strips.
  • Sterilize jars.
  • Put enough oil in jar to cover bottom and add 1/8 tsp Alum.
  • Put 2 cloves garlic in each jar.
  • Boil lids and water, vinegar and salt mixture.
  • Stuff jars with peppers.
  • Pour hot brine over peppers.
  • Put on seal and lid and tighten down band.
  • Let sit over night.
  • We turn jars every 7 days.
  • Wait for 30 days if you can stand it.
  • I have put everything in this brine. Green Tomatoes, apples etc..
