Valley’s Banana bread
½ cup applesauce (or lemon yogurt)
1 cup sugar
¼ cup liquid egg substitute or two medium eggs
3 overripe bananas
2 cups flour
1 teaspoon baking soda
1/3 cup walnuts, crushed
½ teaspoon salt
1/3 cup raisins, optional (use less sugar if using raisins)
Combine applesauce and sugar.
Add egg and bananas.
Beat in flour, soda, and salt, add nuts, place in loaf pan.
Bake in 350 degree oven until a toothpick inserted into the thickest part of the bread comes out clean (without dough on it), approximately 45 minutes.
Let cool at least 10 minutes and remove loaf from pan.
