Fresh Cucumbers with Vinegar

Ingredients:
  • 3 to 4 medium to large ripe cucumbers
  • 1 cup table salt (this is not a typo)
  • enough white vinegar to cover sliced cucumbers
  • salt & pepper to taste

  • Steps:
  • Peel the cucumbers, remove the ends.
  • Slice them thinly (food processor with 2mm blade is perfect) into a large glass or plastic mixing bowl. Mix in 1 cup salt, cover, and let sit at room temp until cucumbers become soft and water has leached out of them (should take about 1/2 hour).
  • Rinse them very well in a colander under cold running water, until they are no longer unbearably salty. The slices will still have a lightly salted flavor.
  • Cover with white vinegar; add salt & pepper based on your preference for each.
  • Cover bowl and place in refrigerator; chill at between two and six hours.
  • Serve cold as a side dish. Don't drain the vinegar, just spoon them straight out of the bowl.
