Ingredients:
  • 2-2/3 Cups Flour
  • 2/3 Cup Dutch-processed Cocoa
  • 1-1/2 tsp. Baking Powder
  • 1-1/2 tsp. Baking Soda
  • 1 tsp. Salt
  • 6 TBLS unsalted Butter @ Room Temperature
  • 1-1/3 Cups Dark Brown Sugar tightly packed
  • 1/2 Cup canola or vegetable oil
  • 3 Eggs
  • 4 Oz. Bittersweet Chocolate Melted & Cooled
  • 1-1/2 Cups Buttermilk


  • Filling
  • 1 LB Unsalted Butter @ room Temperature
  • 1-1/2 Cups Confectioner's Sugar Sifted
  • 1 TBLS Vanilla
  • 1 LB container of Marshmallow Fluff

  • Steps:
  • Shift Flour, Cocoa, Baking Soda & Powder & Salt together
  • In Electric Mixer cream together Butter & Brown Sugar. Drizzel in Oil. Add the eggs 1 at a time. Scrape bowl between additions.
  • Mix in Chocolate
  • Add dry Ingredients in 3 additions, alternating with buttermilk in two additions.
  • Pour Batter into shallow container.
  • Chill for at least 1 hour.
  • Preheat oven to 350 Degress.
  • Drop 2 TBLS batter 2 inches apart onto lightly greased, parchment paper-covered baking sheets.
  • Let Rest 10 Minutes.
  • Bake for 12 minutes rotating pans after 6 minutes.
  • Cool Cakes Completely.
  • Scoop Filling (Below) onto half the Cakes.
  • Top with remaining Cakes.
  • Store in Refrigerator.


  • FILLING


  • Beat together 1 LB Unsalted Butter @ room temperature and 1-1/2 cups confectioner's Sugar, Sifted.
  • Add 1 TBLS vanilla & 1 LB container Marshmallow Fluff and beat until thoroughly incorporated.
